How to make it

  • Slice up Maderia Cake and press firmly into your cake tin, forming a tight base, try not to leave any gaps. If you have an excess of cake, don't worry, just go onto another layer.
  • Beat the mascarpone cheese in a bowl, add the egg yolks, cinnamon, sugar and the seeds from the vanilla pod (Try not to use vanilla essence, the seeds create a better taste!).
  • Melt the white chocolate and add this too the mixture.
  • Beat the mixture until smooth.
  • Beat egg whites until smooth, and FOLD into mixture, do not stir or beat or your chessecake will be rubbish!
  • Finally add half a lemon's zest to the mixture, stir and cook on the low shelf of the oven at 180 degrees celcius (350 degrees farenheit or Gas mark 4) for about 30 minutes. Reduce the heat to 150 degrees celcius (300 farenheit or Gas mark 2) and bake for 10 minutes.
  • If baked through, the topping should be golden brown, serve each slice with a small squirt of whipped cream and a sprinkling of ground cinnamon.
  • Enjoy!!

    I adapted this from my friend's mum's recipe that was simply fab! All I needed to add was the cinnamon! Although I used a completely different recipe, the result was flawless and this is now my favourite thing to eat!
