Ingredients
  • 2 small green peppers diced
  • 1 small onion diced
  • 2 tablspoons oil
  • 2 cups cooked hominy
  • 1 cup grated colby cheese{I prefer pepperjack chees grated}

Directions
  1. In skillet simmer pepper onion in oil untill softened about 5 minutes add hominy fry untill brown jus before removing from fire put cheese on top to melt season to taste makes 4 servings
