Apple Chilli Chutney Recipe
Use up those windfall apples and produce a zingy alternative to apple sauce. A good replacement for mango chutney. Great with Ham / Pheasant / Chicken / turkey.

Ingredients
  • 1kg tart eating apples (before peeling etc)
  • 400g granulated sugar
  • 15 chillies (jalapeno) or adjust to your taste
  • 1 large onion (chopped)
  • 500ml red wine vinegar
  • 3 tbsp Saba (thick cooked grape juice)
  • 1sp salt
  • 1 inch piece of fresh ginger
  • Hot sterilised jars

Directions
  1. Liquidise chillies and ginger in the Saba.
  2. (If you can't find Saba then add a tbsp balsamic vinegar to 2tbsp of the red wine vinegar to liquidise these in)
  3. Pour red wine vinegar into large pan- add onions; apples; liquidised chilli / ginger.
  4. Add tsp salt and the chopped apples
  5. Bring to boil then add sugar.
  6. Reduce heat and stir well till sugar is dissolved.
  7. Simmer gently till thickened.
  8. Cool slightly then spoon into hot jars and seal with lids whilst hot.
  9. Makes about 1kg of chutney.
  10. This is good fresh / can be frozen as well.
  11. Will get slightly hotter with age.
