How to make it

  • Liquidise chillies and ginger in the Saba.
  • (If you can't find Saba then add a tbsp balsamic vinegar to 2tbsp of the red wine vinegar to liquidise these in)
  • Pour red wine vinegar into large pan- add onions; apples; liquidised chilli / ginger.
  • Add tsp salt and the chopped apples
  • Bring to boil then add sugar.
  • Reduce heat and stir well till sugar is dissolved.
  • Simmer gently till thickened.
  • Cool slightly then spoon into hot jars and seal with lids whilst hot.
  • Makes about 1kg of chutney.
  • This is good fresh / can be frozen as well.
  • Will get slightly hotter with age.
