Apple Chilli Chutney

- 1kg tart eating apples (before peeling etc) shopping list
- 400g granulated sugar shopping list
- 15 chillies (jalapeno) or adjust to your taste shopping list
- 1 large onion (chopped) shopping list
- 500ml red wine vinegar shopping list
- 3 tbsp Saba (thick cooked grape juice) shopping list
- 1sp salt shopping list
- 1 inch piece of fresh ginger shopping list
- Hot sterilised jars shopping list
How to make it
- Liquidise chillies and ginger in the Saba.
- (If you can't find Saba then add a tbsp balsamic vinegar to 2tbsp of the red wine vinegar to liquidise these in)
- Pour red wine vinegar into large pan- add onions; apples; liquidised chilli / ginger.
- Add tsp salt and the chopped apples
- Bring to boil then add sugar.
- Reduce heat and stir well till sugar is dissolved.
- Simmer gently till thickened.
- Cool slightly then spoon into hot jars and seal with lids whilst hot.
- Makes about 1kg of chutney.
- This is good fresh / can be frozen as well.
- Will get slightly hotter with age.
