Ingredients
  • 1-1.5 lbs of ground turkey
  • 1 jar (1 lb 10 oz) of your favorite pasta sauce (recommend something chunky)
  • 1 large egg, lightly beaten
  • 1/4 cup of plain dry bread crumbs
  • 2 cups of your favorite shredded cheese (recommend colby/cheddar mix)

Directions
  1. Preheat over to 350 degrees.
  2. In a large bowl, combine turkey, 1/3 cup of Pasta Sauce, egg, and bread crumbs. Add salt and pepper if desired.
  3. Line a 13 x 9 inch baking pan with foil.
  4. In the pan, shape the turkey mixture into a rectangle that's slightly smaller than the pan.
  5. Sprinkle 1.5 cups of cheese down the center, leaving a .75 inch border. Roll, starting at a long end, like a jelly roll. Press ends together to seal.
  6. Bake uncovered 45 mins.
  7. Pour remaining sauce over the meatloaf and sprinkle with cheese.
  8. Bake 15 mins until sauce is heated and cheese is melted.
  9. Remove from oven and let stand 5 mins before serving.

Might be neat if you rolled it the long way and stuff the length into a terrine mold - could slice across after cooked and serve with sauce?
