Colorful Squash

- 1 medium Spagetti squash (about 2 1/2 pounds) shopping list
- 1 medium zucchini (I use two medium to small zucchinis) shopping list
- 1 Tbs olive oil (or vegetable oil) shopping list
- 1 bell pepper cut into strips (I will usually use a third of each of red, yellow and orange. You can use green or purple also) shopping list
- 1 pkg (10oz) frozen peas, thawed shopping list
- 1 tsp oregano shopping list
- 1/2 tsp sea salt shopping list
- a few turns of the pepper mill shopping list
- 1 or 2 cloves of garlic crushed shopping list
- Grated parmesan cheese shopping list
- 1 Tbs chopped parsley shopping list
How to make it
- Cut squash lenghtwise in half; discard seed, wrap each half with plastic wrap.
- Microwave on high 13 to 18 minutes, until flesh is tender.
- Let stand 5 minutes.

- Cut zucchini into 1/4 inch slices
- In a large skillet, cook zucchini in oil and crushed garlic 3 min.,
- Add peppers and peas; cook 2 minutes until veggies are crisp tender.
- Stir in oregano, salt, pepper.

- To Serve:
- Scrape spagetti squash into a serving bowl.
- Add veggies and lightly toss.
- Top with parmesan cheese and parsely.
- Serve with Italian bread
