Ingredients
  • 3/4 - pound beef (flank)
  • 4- tablespoons melted shortening
  • 3- onions , sliced
  • 1- green pepper, sliced
  • 1- cup tomato soup
  • 1- cup diced celery
  • 1 1/2 - teaspoons salt
  • 1- cup cooked vegetables or ( leftover veggies) such as green beans , peas carrots, corn etc…..
  • 8- stuffed olives sliced
  • 2- cups rice steamed

Directions
  1. Cut your meat into very thin slices, then fry in a hot skillet filled with the melted shortening until brown and crisp.
  2. Remove the meat and set aside.
  3. Now cook the onions and green pepper in the shortening until they are soft.
  4. Add the tomato soup, meat celery, and seasonings…….
  5. Simmer until the onions and celery are tender…….
  6. Add your cooked vegetables or( left over veggies)and olives. And cook thru till hot ……..
  7. This should be served on a bed a steamed rice
  8. Sprinkle some fresh parsley on top for garnish……..

First of all, thanks for letting me know that the
Pumpkin Chocolate Chip Bread will taste just as good when my daughter bakes it in 'mini-muffin' tins !
