Orange-Apricot Sherbert

- 1 cup light cream shopping list
- 1 cup sugar shopping list
- 3/4 cup corn syrup shopping list
- 1 cup canned apricot nectar shopping list
- 1 cup orange juice shopping list
- 1/4 cup fresh lemon juice shopping list
- 2 tsp grated orange rind shopping list
- 1 tsp grated lemon rind shopping list
- 2 egg whites shopping list
How to make it
- Combine cream, sugar and corn syrup in saucepan.
- Heat ot scalding.
- Remove from heat and cool.
- Stir in apricot nectar, orange juice, lemon juice, orange and lemon rind.
- Put into a metal pan and freeze untl firm.
- Beat egg whites until stiff. Put frozen sherbet in chilled bowl and beat unti fluffy(work quickly so sherbet doesn't melt).
- Fold in egg whites.
- Return to pan and freeze until firm.
