Sirloin N Salsa Soup

- 1 pound sirloin tips, cooked tender, or chicken shopping list
- 1 tablespoon vegetable oil shopping list
- 1 small onion, finely chopped shopping list
- 2 cloves garlic shopping list
- 1 (19.75-ounce) can sweet potatoes, drained (optional) shopping list
- 1 (14.5-ounce) can chicken broth or beef broth shopping list
- 1 (11.5-ounce) jar salsa shopping list
- 1 teaspoon oregano shopping list
- 3 tablespoons fresh cilantro or parsley, chopped shopping list
- 1 (15-ounce) can kidney beans, drained and rinsed shopping list
- 1 (15.25-ounce) can whole kernel corn, drained shopping list
- 2 teaspoons lime juice shopping list
- 1/3 cup tortilla chips, finely crumbled shopping list
How to make it
- Cook beef (or chicken) in oil, with onion and garlic, until tender.
- In large stock pot, mash sweet potatoes.
- Add beef broth, salsa, oregano and parsley or cilantro.
- Bring to slight boil; add meat mixture, reduce heat, simmer until meat is tender.
- Add kidney beans, corn, lime juice and tortilla chips.
- Simmer another 20-30 minutes until stew has thickened.
- Great served with corn bread.
