How to make it

  • Heat the oil in a frying pan
  • Add the aubergines and fry for 10 minutes until golden and softened
  • Add the red onion, capers, tomatoes, parsley and vinegar and stir to combine
  • Remove the pan from the heat and leave to cool for about 10 minutes
  • Serve with salad leaves and warm crusty bread
