Lemon Meringue Pie an Aussie version

Ingredients
  • Pastry
  • Lemon juice 2 cups lemon juice
  • Sugar 1 cup
  • Cornflour 6 tablespoons
  • Plain flour 2 tablespoons
  • Butter 3 large tablespoons
  • 4 egg yolks
  • 4 egg whites
  • Water 1/2 cup

Directions
  1. Place pastry in greased pie dish bake about 10mins
  2. Filling..
  3. Place lemon juice water in pan add sugar stir add flour and blend till smooth
  4. Stir over low heat till until mixture boils reduce heat for further 2 minutes
  5. Remove from heat and stir in butter and lightly beaten egg yolks cool add to pastry
  6. Meringue..
  7. Beat egg whites when thick add ¾ cup white sugar very slowly by tablespoon beating as you go.
  8. When egg whites are very stiff spoon on to lemon custard and bake till stiff and just a slight colour change
