- Pastry shopping list
- lemon juice 2 cups lemon juice shopping list
- sugar 1 cup shopping list
- cornflour 6 tablespoons shopping list
- Plain flour 2 tablespoons shopping list
- butter 3 large tablespoons shopping list
- 4 egg yolks shopping list
- 4 egg whites shopping list
- water 1/2 cup shopping list
How to make it
- Place pastry in greased pie dish bake about 10mins
- Filling..
- Place lemon juice water in pan add sugar stir add flour and blend till smooth
- Stir over low heat till until mixture boils reduce heat for further 2 minutes
- Remove from heat and stir in butter and lightly beaten egg yolks cool add to pastry
- Meringue..
- Beat egg whites when thick add ¾ cup white sugar very slowly by tablespoon beating as you go.
- When egg whites are very stiff spoon on to lemon custard and bake till stiff and just a slight colour change
