How to make it

  • Place pastry in greased pie dish bake about 10mins
  • Filling..
  • Place lemon juice water in pan add sugar stir add flour and blend till smooth
  • Stir over low heat till until mixture boils reduce heat for further 2 minutes
  • Remove from heat and stir in butter and lightly beaten egg yolks cool add to pastry
  • Meringue..
  • Beat egg whites when thick add ¾ cup white sugar very slowly by tablespoon beating as you go.
  • When egg whites are very stiff spoon on to lemon custard and bake till stiff and just a slight colour change
