My mother used to make this for me and I have been craving it lately. Since joining GR, I have been looking for old recipes like this to share. I hope you enjoy this as much as I do. It is a good way to use up leftover (planned over) rice!

Ingredients
  • 8 strips of bacon
  • 1/3 cup sugar
  • 1/3 cup cider vinegar
  • 3/4 tsp. celery seed
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 1/4 cup chopped pimentos
  • 1/4 cup chopped green pepper
  • 1/4 cup chopped onion
  • 3 1/2 cups hot cooked rice
  • 1 hard-cooked egg, diced

Directions
  1. In a skillet, over medium heat, cook bacon until crisp. Drain, reserving 1/3 cup of bacon drippings. Crumble bacon and set aside.
  2. Add the sugar, vinegar, celery seed, salt and pepper to drippings. Bring to a boil; cook and stir for one minute.
  3. Stir in pimentos, green pepper, onions, rice and bacon.
  4. Garnish with the egg (and a sprinkle of parsley.if you like!).
