Bruschetta Pasta

- 400g-linguine pasta shopping list
- 4 ripe tomatoes, roughly chopped shopping list
- 1 red onion, chopped shopping list
- 1 garlic clove, crushed shopping list
- 2 Tlbs extra virgin olive oil shopping list
- 1 Tlbs red wine vinegar shopping list
- 1/2 cup roughly torn fresh basil shopping list
- 2 Tlbs fresh oregano leaves shopping list
How to make it
- Cook the pasta in a large saucepan of boiling salted water according to packet instructions.
- Meanwhile, combine all the remaining ingredients in a large bowl and season with sea salt and freshly ground black pepper.
- Allow to stand for 10 minutes to let the flavours infuse. Drain the pasta, then add to the other ingredients and toss to combine.

We do this a lot in the summer with our garden fresh tomatoes, basil and garlic...the Italian garden! These flavors are the best! It is a quick and healthy week night supper. Great post ^5
