Chilean New York Strips Recipe
CHILEAN NEW YORK STRIPS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Miller Estate in Wills Point, Texas in 1992.

Ingredients
  • 5-1/2 tablespoons olive oil
  • 1 large white onion peeled and julienned
  • 1/4 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • 2 baking potatoes
  • 1/2 cup vegetable oil
  • 2 New York strip steaks
  • 2 cloves garlic peeled and minced
  • 4 whole eggs
  • 1/8 teaspoon flat leaf parsley chopped

Directions
  1. Heat 3 tablespoons oil and slowly saute onions stirring occasionally until they caramelize.
  2. Add salt and pepper then remove onions to a dish and keep them warm.
  3. Peel potatoes and keep them submerged in a bowl of water to avoid oxidation.
  4. Just before frying slice potatoes French fry style then dry and fry in oil until golden brown.
  5. Remove potatoes and drain over paper towels then add salt to taste and keep them warm.
  6. Rub steaks with minced garlic and fry them in a very hot oiled pan or griddle.
  7. Brown one side first until juice droplets start to appear on top then turn meat and fry 1 minute.
  8. Add salt and pepper to taste and keep the steaks warm.
  9. Fry eggs sunny side up in the same pan or griddle as the steaks and add salt and pepper to taste.
  10. Arrange food on serving plate with steak in the middle with eggs on top.
  11. Place fried potatoes on one side and onions on the other then garnish with parsley and serve.
