Chilean New York Strips

- 5-1/2 tablespoons olive oil shopping list
- 1 large white onion peeled and julienned shopping list
- 1/4 teaspoon salt shopping list
- 1 teaspoon freshly ground black pepper shopping list
- 2 baking potatoes shopping list
- 1/2 cup vegetable oil shopping list
- 2 New York strip steaks shopping list
- 2 cloves garlic peeled and minced shopping list
- 4 whole eggs shopping list
- 1/8 teaspoon flat leaf parsley chopped shopping list
How to make it
- Heat 3 tablespoons oil and slowly saute onions stirring occasionally until they caramelize.
- Add salt and pepper then remove onions to a dish and keep them warm.
- Peel potatoes and keep them submerged in a bowl of water to avoid oxidation.
- Just before frying slice potatoes French fry style then dry and fry in oil until golden brown.
- Remove potatoes and drain over paper towels then add salt to taste and keep them warm.
- Rub steaks with minced garlic and fry them in a very hot oiled pan or griddle.
- Brown one side first until juice droplets start to appear on top then turn meat and fry 1 minute.
- Add salt and pepper to taste and keep the steaks warm.
- Fry eggs sunny side up in the same pan or griddle as the steaks and add salt and pepper to taste.
- Arrange food on serving plate with steak in the middle with eggs on top.
- Place fried potatoes on one side and onions on the other then garnish with parsley and serve.
