How to make it

  • Preheat and oven to 350 degrees.
  • Place the sausages in a baking dish and pour 1/2 cup of the wine over them.
  • Place in the oven and bake until brown and cooked through, about 40 minutes, basting a few times with the dish juices.
  • Place the leeks in a saucepan.
  • Add the chicken stock, the remaining 1/2 cup wine, the olive oil, whole onions and shallots, lemon juice, thyme, marjoram, bay leaf and salt and pepper to taste.
  • Bring to a simmer over medium heat and cook, uncovered, until tender, 20-25 minutes.
  • Remove from the heat and let cool. Stir in the balsamic vinegar.
  • Remove the sausages, discarding the cooking liquid. Thinly slice them lengthwise. Add to the leeks and mix well.
  • Just before serving, remove the bay leaf. Place the leeks, onions, shallots, sausage and their marinade in a serving dish. Sprinkle with the parsley and serve.
