Leeks with Onions Shallots and Sausage

- 2 mild Italian sausages, about 1/2 pound shopping list
- 1 cup dry white wine shopping list
- 6 medium leeks, 4 inches of white part only,trimmed, carefully washed and cut in half lengthwise shopping list
- 1 cup chicken stock shopping list
- 1/4 cup olive oil shopping list
- 6 small white boiling onions shopping list
- 6 shallots shopping list
- 2 tablespoons fresh lemon juice shopping list
- teaspoon dried thyme shopping list
- 1 teaspoon dried marjoram shopping list
- 1 bay leaf shopping list
- salt and freshly ground pepper shopping list
- 1 1/2 teaspoons balsamic vinegar shopping list
- 2 tablespoons finely chopped fresh parsley shopping list
How to make it
- Preheat and oven to 350 degrees.
- Place the sausages in a baking dish and pour 1/2 cup of the wine over them.
- Place in the oven and bake until brown and cooked through, about 40 minutes, basting a few times with the dish juices.
- Place the leeks in a saucepan.
- Add the chicken stock, the remaining 1/2 cup wine, the olive oil, whole onions and shallots, lemon juice, thyme, marjoram, bay leaf and salt and pepper to taste.
- Bring to a simmer over medium heat and cook, uncovered, until tender, 20-25 minutes.
- Remove from the heat and let cool. Stir in the balsamic vinegar.
- Remove the sausages, discarding the cooking liquid. Thinly slice them lengthwise. Add to the leeks and mix well.
- Just before serving, remove the bay leaf. Place the leeks, onions, shallots, sausage and their marinade in a serving dish. Sprinkle with the parsley and serve.
