Fresh Vegetable Pasta

- 2 Tbsp olive oil shopping list
- 2 cloves garlic shopping list
- 1 small onion, sliced shopping list
- 1 small bell pepper, chopped shopping list
- 1 medium zucchini, sliced shopping list
- 1 medium yellow squash, sliced shopping list
- 1 small tomato, chopped, or 1/2 cup grape tomatoes, whole shopping list
- 1 Tbsp chopped fresh herbs (basil, oregano, rosemary, thyme or parsley) shopping list
- 1 lb. dried pasta, cooked to package directions shopping list
- salt and pepper to taste shopping list
- Parmesan or Peccorino romano cheese, grated (optional) shopping list
How to make it
- Heat olive oil in a skillet or large saucepan over medium to medium-high heat, taking care not to let the oil smoke. Add garlic and lower heat, cooking briefly. Add onion, return heat to medium, and saute until onion begins to turn clear.
- Add remaining vegetables to skillet, and saute until they are nearly tender. Add fresh herbs and saute 1 to 2 minutes more.
- Toss sauce with cooked pasta. Season to taste. Sprinkle with Parmesan or Peccorino Romano cheese, if desired.
