Fresh Vegetable Pasta Recipe
This is the simplest pasta dinner I can think of, and is easily customizable. Just substitute your favorite vegetables, add chicken or shrimp, and season with your favorite herbs.

Ingredients
  • 2 Tbsp olive oil
  • 2 cloves garlic
  • 1 small onion, sliced
  • 1 small bell pepper, chopped
  • 1 medium zucchini, sliced
  • 1 medium yellow squash, sliced
  • 1 small tomato, chopped, or 1/2 cup grape tomatoes, whole
  • 1 Tbsp chopped fresh herbs (basil, oregano, rosemary, thyme or parsley)
  • 1 lb. dried pasta, cooked to package directions
  • Salt and pepper to taste
  • Parmesan or Peccorino Romano cheese, grated (optional)

Directions
  1. Heat olive oil in a skillet or large saucepan over medium to medium-high heat, taking care not to let the oil smoke. Add garlic and lower heat, cooking briefly. Add onion, return heat to medium, and saute until onion begins to turn clear.
  2. Add remaining vegetables to skillet, and saute until they are nearly tender. Add fresh herbs and saute 1 to 2 minutes more.
  3. Toss sauce with cooked pasta. Season to taste. Sprinkle with Parmesan or Peccorino Romano cheese, if desired.

It's actually good without the herbs, with just a little salt. Simple food, made even better with good fresh ingredients. It's fantastic with stuff from the farmer's market. ^_^
