How to make it

  • Heat olive oil in a saute pan.
  • Add the garlic and cook on med/low for about 2 minutes.
  • Add the wet escarole tops and stir well, turning over the leaves until they are bright green and starting to wilt.
  • Add the rinsed beans to the greens and sprinkle with salt and pepper flakes.
  • Stir again well.
  • Continue cooking for about 5 minutes, stirring ocassionally, until all flavours blend.
  • Enjoy!

    yeah-
    the canellini's are the traditional way..
    nothing revolutionary about that...

    i have updated this with the gigante beans...
    they are much prettier (in my opinion) and less starchy, so it looks more appetizing and IS more appetizing...
