Sauteed Escarole With Gigante Beans

- Dark leafy tops of two bunches of escarole (washed and trimmed) shopping list
- about 1/2 can of Goya giant white beans (Gigante in Italian)-RINSED shopping list
- 2 cloves of garlic roughly chopped shopping list
- 1 tsp kosher salt shopping list
- 2 TBSP olive oil shopping list
- 1/2 tsp red pepper flakes ( more or less to taste) shopping list
How to make it
- Heat olive oil in a saute pan.
- Add the garlic and cook on med/low for about 2 minutes.
- Add the wet escarole tops and stir well, turning over the leaves until they are bright green and starting to wilt.
- Add the rinsed beans to the greens and sprinkle with salt and pepper flakes.
- Stir again well.
- Continue cooking for about 5 minutes, stirring ocassionally, until all flavours blend.
- Enjoy!
