How to make it

  • Preheat oven to 140 degrees C a cool oven, if pav starts changing colour during cookin turn it down a bit more
  • With an electric mixer beat the egg whites until soft peaks form then gradually add the sugar a tablespoon at a time beating constantly
  • till all sugar used and eggw hite is very stiff and glosssy .
  • Add the cornflour, vinegar and vanilla and fold through
  • When combined turn out into a flat tray that has been greased and dusted with cornflour
  • Make a circular shape buiding up at the sides so that it may be served by placing fruit in the centre when cooked
  • Cook in a pre-heated, cool oven for one hour dont let get brown it must stay white.
  • When cooked turn the oven off leave the oven door slightly open and allow to cool slowly in the oven to dry out more
  • Chop fresh fruit bannans(with a squueze of lemon juice to stop discoulouring ) strawberries and chopped pineapple and place in center of Pavlova top with whipped cream and finish with kiwi fruit or strawberrys to decorate
