- 4 teaspoons light butter, melted shopping list
- 1 cup fat free egg substitute shopping list
- 1 cup chicken broth shopping list
- 1 16oz loaf day old bread cut into 1/2 inch cubes shopping list
- 1/2 cup minced scallions shopping list
- 1/2 cup minced celery shopping list
- 1 cup dried cranberries shopping list
- 1/4 cup chopped parsley shopping list
- 1 teaspoon grated lemon zest shopping list
- 1/2 teaspoon ground black pepper shopping list
- 1/4 teaspoon salt shopping list
- 1 teaspoon poultry seasoning shopping list
How to make it
- Preheat oven to 375 degrees.
- Coat a 16 cup muffin pan with cooking spray. (do not use liners)
- In a large bowl, combine first 3 ingredients; stir well.
- Add remaining ingredients and toss to combine.
- Set aside for 15 minutes.
- Pinch bread, if still dry and hard, add 1/4 cup warm water.
- Toss.
- Mixture should be soft and spongy, but not mushy.
- With an ice cream scoop, spoon mixture into muffin tins.
- Bake for 20 to 25 minutes.
