Medallions de Salmon

- 2 large salmon steaks shopping list
- 1 medium yellow onion shopping list
- 1 tablespoon olive oil shopping list
- 2 tablespoons unsalted butter shopping list
- 1 tablespoon tomato puree shopping list
- 1/2 teaspoon freshly ground black pepper shopping list
- 1 teaspoon cilantro finely chopped shopping list
- 2 slices orange for garnish shopping list
How to make it
- Marinate medallions in orange juice for one hour then sauté in oil browning both sides.
- Pour in marinade then cook until fish is tender.
- Soften butter and mix with tomato puree, pepper and cilantro.
- Drizzle over each medallion then garnish with orange slices and serve.
