Beet Red Onon and Horseradish Relish

- 3 large beets trimmed shopping list
- 1/2 cup olive oil shopping list
- 3 tablespoons balsamic vinegar shopping list
- 1 teaspoon coarse salt shopping list
- 1/2 teaspoon pepper shopping list
- 1-1/2 cups chopped red onion shopping list
- 1/3 cup prepared white cream style horseradish shopping list
How to make it
- Preheat oven to 350 then wrap beets in double thickness of foil.
- Roast beets on oven rack until tender about 1 hour 45 minutes then unwrap beets and cool.
- Whisk oil, vinegar, salt and pepper in medium bowl until blended.
- Mix in onion and horseradish.
- Peel beets and cut into cubes then add to onion mixture.
- Cover and chill at least 1 day but up to 4.
