Broccoli Knishes Recipe
This is a great vegetable dish that goes great alongside anything. I have been known to eat these as an appetizer or with a salad for a light lunch. Greatness. Enjoy

Ingredients
  • 1 cup mashed potatoes
  • 1/3 cup matzo meal
  • 2 tablespoons potato starch
  • 1/2 small white onion finely chopped
  • 2 egg whites
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 teaspoon salt
  • 1 cup fresh broccoli steamed and finely chopped
  • Cooking spray

Directions
  1. Preheat oven to 375.
  2. Combine potatoes, meal, starch, onion, egg whites, pepper and salt then knead together.
  3. Divide dough into 6 balls and flatten each then divide broccoli evenly onto each circle.
  4. Fold over and press edges to seal.
  5. Generously coat a baking sheet with cooking spray.
  6. Arrange knishes in a single layer and place baking sheet on bottom rack of oven.
  7. Bake 15 minutes on each side then serve hot.
