Ingredients

How to make it

  • Saute peppers, shallot and tomatoes in EVOO with a dash of salt until tender.
  • ****(You can really add any of your fave veggies right from your fridge or garden!)****
  • Crack eggs into bowl and mix with a splash of milk
  • Add eggs to veggie mixture and scramble over medium heat.
  • Mix in cheese right before eggs are cooked completely
  • Once cheese melts, remove from heat and serve.
  • Top with salsa or hot sauce

  • Serve with toast and fruit and you have a delicious, well balanced meal!
  • Enjoy!
