Wyoming Chicken Salad With A Twist Recipe
WYOMING CHICKEN SALAD WITH A TWIST This is a recipe I obtained from an Estate sale. I obtained it when I purchased the family collection from the Tinsley Estate in Venus, Texas in 1987.

Ingredients
  • 6 ounce package corkscrew macaroni
  • 3 cups cooked chicken
  • 1/2 cup Italian dressing
  • 1/2 cup mayonnaise
  • 3 tablespoons lemon juice
  • 1 tablespoon prepared mustard
  • 1 medium white onion chopped
  • 3/4 cup ripe olive wedges
  • 1 cup diced cucumbers
  • 1 cup diced celery
  • 1 teaspoon pepper
  • 1/4 teaspoon salt
  • Lettuce

Directions
  1. Cook macaroni following package directions.
  2. Mix cooked chicken and Italian dressing with hot macaroni then cool.
  3. Blend mayonnaise, lemon juice and mustard.
  4. Stir in chopped onions, olives, cucumbers, celery and pepper.
  5. Add to macaroni mixture then season with salt and mix well.
  6. Chill 2 or more hours to blend flavor then serve in lettuce cups.
