Ingredients
  • 3 c grated raw zucchini or
  • 3 cup cooked spaghetti squash
  • 2 eggs beaten
  • 2 1/2 c mozarella cheese
  • 1/2 cup provalone cheese
  • 1/2 cup fontina cheese
  • 1/2 grated parmesan cheese
  • 1 1/2 cup chopped green onion
  • 1 small bell pepper chopped
  • 1/2 cup mushrooms
  • 1 tomato sliced
  • 1 tsp dried oregano
  • 1tsp dried basil
  • 1-2 tsp olive oil
  • Preheat oven to 400 degrees. squeeze out excess moisture from zucchini or squash with paper towels. Mix squash, eggs and 1 1/2 cups of mozzarella together and press into bottom of pie pan. Bake 10-15 minutes
  • remove pan from oven
  • layer veggies sprinkle with oregano and basil
  • drizzle with oil
  • add all cheeses
  • bake 25 minutes or until cheese is bubbly and turning a little brown in spots
