this recipe appears in 'Ma's Cookin' mountain recipes by "sis and jake", ozark maid candies 1986. it is dead serious and should be considered with equal respect to any other food on this earth.

Ingredients
- i know you jest kin't resist ground hawg meat an' you're always on th' look--out fer one--but if you see one on february 2nd pleeze leave him be. after all--that's ground hawg day-thets his day!
Directions
- when ground hog is dressed be sure to remove the kernel from under the front legs to keep from making it taste. roll in flour, put in hot fat, and fry until brown. then put in inset pans in pressure cooker with 1/2 inch water in bottom of cooker. cook for 70 minutes with 15 pounds of pressure. possum can be cooked the same way with good results.
