Traditional Spiced Pumpkin Pie

- 3 eggs, beaten shopping list
- 1 cup sugar shopping list
- 1 teaspoon salt shopping list
- 1/2 teaspoon cinnamon shopping list
- 1/2 teaspoon ginger shopping list
- 1/2 teaspoon nutmeg shopping list
- 1/4 teaspoon cloves, ground shopping list
- 2 cups pumpkin shopping list
- 2 cups milk, scalded shopping list
- 1 pie crust (9 inch) shopping list
How to make it
- Combine eggs, sugar, salt and spices - gradually stir in milk and then pumpkin. Turn into pie shell. Bake at 450 for 10 minutes and then reduce heat to 350 and bake for another 30-35 minutes until knife inserted in center comes out clean. Cool on rack.
- NOTE: I use a 10" pie pan (so did Mum) so if you use 10", too, halve again the ingredients. i.e. 3 c. pumpkin instead of 2 c., 3/4 t. cinnamon instead of 1/2 t., etc.
