Traditional Spiced Pumpkin Pie Recipe
I've never found another pumpkin pie as perfectly spiced as my mother's. And I bet you think that about YOUR mother's pumpkin pie, too! Pumpkin pie is part of the flavor of Thanksgiving. It is one of my favorite holidays....right after Christmas!

Ingredients
  • 3 eggs, beaten
  • 1 cup sugar
  • 1 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon ginger
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon cloves, ground
  • 2 cups pumpkin
  • 2 cups milk, scalded
  • 1 pie crust (9 inch)

Directions
  1. Combine eggs, sugar, salt and spices - gradually stir in milk and then pumpkin. Turn into pie shell. Bake at 450 for 10 minutes and then reduce heat to 350 and bake for another 30-35 minutes until knife inserted in center comes out clean. Cool on rack.
  2. NOTE: I use a 10" pie pan (so did Mum) so if you use 10", too, halve again the ingredients. i.e. 3 c. pumpkin instead of 2 c., 3/4 t. cinnamon instead of 1/2 t., etc.
