TANTALIZING PLUM PORK CHOPS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Lynch Estate in Garland, Texas in 1994.

Ingredients
  • 4 thick loin pork chops
  • 1 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon granulated sugar
  • 1 jar baby food plums with tapioca
  • 1 teaspoon lemon rind grated
  • 1/4 teaspoon cinnamon
  • 1/8 teaspoon ground cloves
  • 1/2 cup port wine

Directions
  1. Season chops with salt, pepper and sugar then dredge with flower and brown in butter.
  2. Combine plums, lemon rind, cinnamon, cloves and port and mix well.
  3. Transfer chops to shallow baking dish and cover with plum sauce.
  4. Bake at 325 for 1-1/2 hours basting occasionally.
