How to make it

  • Put pasta on to boil
  • Prepare your onion, baby marrow & your garlic
  • Chop chicken into bite size pieces
  • On a medium heat add olive oil to wok / deep pan
  • Fry the chicken just a little,
  • Add the garlic
  • Add the grated baby marrow
  • Add the basil pesto
  • Add the onion
  • Stirring in between
  • Sprinkle some citrus spice over the chicken
  • Its now time to add your spinach (make sure it’s clean and dryish)
  • Cover with a lid and simmer in its own juices for say 5 min.
  • By this time the pasta should be ready, drain the pasta
  • Add some olive oil, to make sure it doesn't stick
  • While everything is still hot pour a glass of wine and serve on a fancy dish, keeping in mind the pasta @ the bottom and the chicken and spinach on top.
