  • Non stick cooking spray
  • 1 cup flour
  • 1 cup yellow cornmeal
  • 1 tablespoon granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 cup unsalted butter, melted
  • l egg
  • 1 cup plus 2 tablespoons buttermilk
  • 1 cup (4 ounces) shredded Wisconsin Pepper Jack cheese

Directions
  1. Cooking Directions:
  2. Preheat oven to 400°F.
  3. Coat 12 muffin cups with nonstick cooking spray.
  4. In large bowl combine flour, cornmeal, sugar, baking powder and baking soda; mix well. In medium bowl, combine butter, egg, buttermilk and cheese; blend well. Make a well in center of dry ingredients and pour in buttermilk mixture. Stir just until dry ingredients are moistened; batter will be lumpy.
  5. Spoon into muffin cups, filling each 2/3 to 3/4 full. Bake about 20 to 25 minutes, until golden brown.
