How to make it

  • Preheat oven to 350F.
  • Put the halibut into an oven-safe dish and drizzle lightly with olive oil.
  • Sprinkle just a little lemon juice around the fillets in the dish and sprinkle a pinch of sea salt onto the fillets.
  • Crush a pinch of cardamom seeds and 3-4 green peppercorns with a mortar and pestle and dust the fish with those and a pinch of ground coriander.
  • Cover the dish with foil or an oven-safe lid and bake until just opaque – about 10-15 minutes for one small fillet.
