Moroccan Halibut Recipe
This is a simple, clean, understated way to prepare halibut. The spice combination is a little unique but doesn't overpower the fish. One of my favorites for halibut.

Ingredients
  • 1 small-med halibut fillet
  • Olive oil
  • Lemon juice
  • Pinch of coriander, ground
  • Pinch of cardamom, crushed
  • 3-4 Green peppercorns, crushed
  • Pinch of sea salt

Directions
  1. Preheat oven to 350F.
  2. Put the halibut into an oven-safe dish and drizzle lightly with olive oil.
  3. Sprinkle just a little lemon juice around the fillets in the dish and sprinkle a pinch of sea salt onto the fillets.
  4. Crush a pinch of cardamom seeds and 3-4 green peppercorns with a mortar and pestle and dust the fish with those and a pinch of ground coriander.
  5. Cover the dish with foil or an oven-safe lid and bake until just opaque – about 10-15 minutes for one small fillet.
