Roasted spicy duck

- ginger paste – 1tsp shopping list
- garlic paste – ½ tsp shopping list
- salt as per taste shopping list
- red chilli powder – ½ tsp shopping list
- mustard oil - 1tsp ( you can use ½ tsp mustard seed paste or sauce) shopping list
- garlic cloves- 6 peeled and chopped shopping list
- green chillies - 2 shopping list
- onions – 2 medium size cut in to rings shopping list
- grated ginger – 1tsp shopping list
- lemon rind grated – 1 tsp shopping list
- curry leaves - chopped finely - ½ tsp( optional) shopping list
- cumin powder – 1tsp shopping list
- black pepper powder – ¼ tsp shopping list
- lemon juice – 1 tsp shopping list
- dried rosemary and thyme- 1/4 tsp( I can afford that only as I don’t get fresh one) Lucky are those who can use the fresh one!! shopping list
How to make it
- Take the meat in a wide bowl.
- Add ginger paste, garlic paste, chopped curry leaves, , salt grated ginger and lemon rind,1 tsp of mustard oil , ½ tsp cumin powder, and marinate preferably for overnite or at least for 4 hours
- Cut the onions in to rings
- Slit the green chilli
- Grease an oven proof baking dish .
- Place a layer of onion rings.
- Transfer the marinated meat to the bed of onion rings in the baking dish.
- Preheat the oven to 300c and cook the meat till its cooked.
- It took 45 mins when I cooked,
- When its taken out from the oven dried rosemary and thyme is sprinkled over.
- A flavor full roasted dish is ready.

Im so used to dipping the bland roasted duck in chilli sauce ........But well , with your recipe ... its gonna be a different story : D
