Potato Pie

- 1 cup milk shopping list
- 1/2 cup sugar shopping list
- Zest of 1 lemon shopping list
- juice of 1 lemon shopping list
- 1 1/2 cups leftover mashed potatoes shopping list
- 2 egg yolks shopping list
- 2 tablespoons melted butter shopping list
- Pinch of salt shopping list
- 2 egg whites, beaten to soft peak shopping list
- nutmeg shopping list
How to make it
- Preheat oven to 475 degrees F.
- Butter the bottom and sides of a 9" pie pan.
- Mix together the milk, sugar, lemon zest and lemon juice.
- Add the mashed potatoes and eggs yolks.
- Mix well.
- Add 2 tablespoons melted butter and a pinch of salt.
- Mix well.
- Fold in the soft-peak egg whites gently.
- Sprinkle with nutmeg (now OR later).
- Bake for 10 minutes at 475 degrees.
- Reduce oven temperature to 350 degrees F.
- Bake another 20 minutes.
