Ingredients

How to make it

  • Preheat oven to 475 degrees F.
  • Butter the bottom and sides of a 9" pie pan.
  • Mix together the milk, sugar, lemon zest and lemon juice.
  • Add the mashed potatoes and eggs yolks.
  • Mix well.
  • Add 2 tablespoons melted butter and a pinch of salt.
  • Mix well.
  • Fold in the soft-peak egg whites gently.
  • Sprinkle with nutmeg (now OR later).
  • Bake for 10 minutes at 475 degrees.
  • Reduce oven temperature to 350 degrees F.
  • Bake another 20 minutes.

    When a friend at our YMCA told me about this pie, I immediately had to try it. Potatoes? Dessert pie? I had to eat it to believe it. Thanks for the 5, Arthur (am I right?). I hope you enjoy it.
