Roasted Shallot Vinaigrette

- 6 - 8 cloves of garlic shopping list
- 1 shallot shopping list
- 1/4 cup extra virgin olive oil, plus more for drizzling shopping list
- coarse salt shopping list
- fresh ground pepper shopping list
- 2 Tbsp basalmic vinegar shopping list
- 1/2 tsp Dijon mustard shopping list
- 1/2 tsp freshly squeezed lemon juice shopping list
How to make it
- Preheat oven to 400 degrees
- Place whole garlic and shallots on parchment paper lined foil
- Drizzle with oil
- Season with salt and pepper
- Wrap package and roast for 45 minutes
- Set aside to cool
- Remove peel from garlic and shallot
- In food processor combine garlic, shallots, vinegar, mustard & lemon juice
- With machine running add olive oil
- Season with salt & pepper
