Beef Goulash Recipe
This is very good. I got this at an estate sale a few years ago and have made it several times since then. It's tasty and goes a long way. Enjoy

Ingredients
  • 3 tablespoons vegetable oil
  • 1-1/2 pounds boneless trimmed of fat chuck steak cut into cubes
  • 1 white onion peeled and chopped
  • 1 garlic clove finely chopped
  • 1 tablespoon sweet Hungarian paprika
  • 1 cup water
  • 1 green bell pepper seeded and quartered
  • 1 ripe tomato peeled seeded and quartered
  • 1/4 teaspoon caraway seeds
  • 1 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • 5 medium potatoes peeled and diced
  • Hot cooked noodles

Directions
  1. In Dutch oven or large heavy saucepan heat oil over medium high heat.
  2. Add beef a few pieces at a time then brown well on all sides.
  3. Remove beef and set aside.
  4. To drippings in Dutch oven add onion and garlic then saute 3 minutes.
  5. Return beef to pot and add paprika stirring to coat meat evenly.
  6. Stir in 1 cup water or enough to cover beef.
  7. Add green pepper, tomato, caraway seeds, salt and pepper then reduce heat to very low, cover and cook 2 hours.
  8. Add potatoes then cover and cook 30 minutes longer.
  9. Serve with noodles.

I love this. I usually add quite a bit more paprika cuz I really love it. Alot of people are unaware of the Hungarian sweet paprika. They're used to that tasteless paprika that is sprinkled on deviled eggs and mayo-based salads basically for decoration or color. I also often use some sour cream in my goulash. Thanks for the recipe!
