How to make it

  • Notes:
  • 1) You need to do the onions first other wise you are likely to burn the garlic buy the time the onions are done.
  • 2) You will need to boil all the water off so if you need to add more water add only alittle at a time - you boil it off so that you keep all the nutrience that whent from your food into the water while cooking (because of osmosis trying to each an equilibrium of nutrience between your ingredients and water). Boiling the water off instead of pouring it down the drain allows you to get more nutrience from your pasta and other food.
  • Steps:
  • 1) in a medium sized frying pan; add the Olive Oil and spread it around evenly. Put the pan to a medium to high temp and let it warm up; with the lid on it.
  • 2) While the pan is warming Chop the Onion into small (~1cm). WHen your done put the onions in the pan, give them a stir and cover the pan back up.
  • 3)Prep and chop your garlic - once its choped take the lid off the pan with the onions and smell the onions in the pan. If you can smell the begining of that sweet sencent of cooked/sweated/caramelized onions than it is time to put the garlic in.
  • 4) Stir the pan of onions and garlic and get your pasta ready.
  • 5) When you can smell the garlic and onions together. Once you can, add a small amount of water (1/2 to 1 cup).
  • 6) Add your hard pasta to your pan and stread it around making sure that about 80% to 90% of each piece of pasta is covered by water. Then cover the pan and allow time for the pasta to soften, but make sure that you do not run out of water (allowing it to cook and making it burn).
  • 7) Once your pasta is cooked to your liking;
  • 7a) Look at the amount of water left and boil if off if you can see water without moving your pan (if you can only see if by tipping the pan to one side and letting it trickle down - then the amount is ok and will not water down the sauce).
  • 7b) If they amount of water is fine than turn off the burner and put the pan on a cool burner or on a countertop etc. Either split the portions now or later (i put them into bowls after step 8).
  • 8) Add the pasta sauce and mix well. 1/2 cup total; 1/4 cup per serving.
  • 9) Add the cheese and mix well. 2 tbs total; 1 tbs per serving
