Lemon Turkey Recipe
LEMON TURKEY This recipe came from an estate sale. I obtained it when I purchased the family collection from the Candela Estate in Dallas, Texas in 1997.

Ingredients
  • 1/2 cup fresh lemon juice
  • 1/4 cup dry white wine
  • 1/4 cup olive oil
  • 1 clove garlic minced
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1-1/2 pound boneless skinless turkey breast
  • 1/2 cup bread crumbs
  • 1 tablespoon paprika

Directions
  1. Mix lemon juice, wine, oil and garlic.
  2. Slice turkey crosswise into slices then soak in half of the marinade overnight in refrigerator.
  3. Reserve the other half of marinade for basting.
  4. Mix bread crumbs, salt, pepper and paprika.
  5. Dip turkey slices into bread crumbs and place in greased baking dish.
  6. Bake at 375 for 45 minutes basting with marinade every 15 minutes while cooking.
