Soft Lentils With Roasted Tomatoes And Caramelized Onions Recipe
SOFT LENTILS WITH ROASTED TOMATOES AND CARAMELIZED ONIONS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Candela Estate in Dallas, Texas in 1997.

Ingredients
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 3 cups minced onion
  • 1-1/2 teaspoons salt
  • 1 cup minced roasted tomatoes
  • 1 cup diced canned tomatoes
  • 1 tablespoon firmly packed brown sugar
  • 1 tablespoon balsamic vinegar
  • 8 cups cooked lentils
  • 1 teaspoon freshly ground black pepper
  • Pitted sliced green olives for garnish

Directions
  1. Preheat oven to 350 then lightly oil or spray a shallow rectangular casserole dish.
  2. Heat olive oil in a large deep skillet then add butter and let it melt into oil.
  3. Stir in onion and salt then cook covered over low heat for 30 minutes stirring often.
  4. Add tomatoes then cover and cook another 20 minutes stirring frequently.
  5. Add sugar, vinegar, lentils and pepper then stir well.
  6. Transfer to prepared baking pan then cover tightly with foil and bake 45 minutes.
  7. Serve hot topped with a scattering of sliced green olives.
