Soft Lentils With Roasted Tomatoes and Caramelized Onions

- 1 tablespoon olive oil shopping list
- 1 tablespoon butter shopping list
- 3 cups minced onion shopping list
- 1-1/2 teaspoons salt shopping list
- 1 cup minced roasted tomatoes shopping list
- 1 cup diced canned tomatoes shopping list
- 1 tablespoon firmly packed brown sugar shopping list
- 1 tablespoon balsamic vinegar shopping list
- 8 cups cooked lentils shopping list
- 1 teaspoon freshly ground black pepper shopping list
- Pitted sliced green olives for garnish shopping list
How to make it
- Preheat oven to 350 then lightly oil or spray a shallow rectangular casserole dish.
- Heat olive oil in a large deep skillet then add butter and let it melt into oil.
- Stir in onion and salt then cook covered over low heat for 30 minutes stirring often.
- Add tomatoes then cover and cook another 20 minutes stirring frequently.
- Add sugar, vinegar, lentils and pepper then stir well.
- Transfer to prepared baking pan then cover tightly with foil and bake 45 minutes.
- Serve hot topped with a scattering of sliced green olives.
