How to make it

  • Preheat oven to 350 then lightly oil or spray a shallow rectangular casserole dish.
  • Heat olive oil in a large deep skillet then add butter and let it melt into oil.
  • Stir in onion and salt then cook covered over low heat for 30 minutes stirring often.
  • Add tomatoes then cover and cook another 20 minutes stirring frequently.
  • Add sugar, vinegar, lentils and pepper then stir well.
  • Transfer to prepared baking pan then cover tightly with foil and bake 45 minutes.
  • Serve hot topped with a scattering of sliced green olives.
