Cornmeal Sage Muffins Recipe
Quite tasty, this recipe could easily be converted into a cornbread... The sage flavor really stands out. Makes 6 "giant" muffins OR 12 "cupcake" ones.

Ingredients
  • Preheat oven to 400 degrees F.
  • 1 1/2 cups cornmeal of your choice
  • 2 cups buttermilk
  • 3 large eggs
  • 1/2 cup melted butter
  • 1 tablespoon sugar
  • 1 teaspoon dried sage
  • 1 1/2 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • 1 1/2 teaspoons salt

Directions
  1. Mix together the cornmeal and buttermilk.
  2. Allow to stand for 10 minutes.
  3. Combine eggs, melted butter, sugar and sage.
  4. Mix well.
  5. Combine the flour, baking powder, baking soda and salt.
  6. Mix well.
  7. Combine wet and dry ingredients until just moistened.
  8. Pour into muffin tins.
  9. Bake for 20 minutes.
