Berry Tarte Recipe
Very impressive dessert yet not overly difficult to prepare successfully.

Ingredients
  • Pastry
  • 2 cups all purpose flour
  • 1/4 cup sugar
  • 1 tsp salt
  • 1/2 cup unsalted cold butter (1 stick) cut lengthwise into four logs then into squares from the logs
  • 2 tablespoons shortening vegetable or otherwise
  • small bowl of ice water close by
  • Filling 1/3 cup heavy cream
  • 1 egg
  • 1/4 cup sugar
  • 2 tsp vanilla extract
  • 1 quart of berries (blue berries, raspberries, cherries, mixed berries... your choice) to top the tarte. (I like the very cherry berry blend of frozen berries from Trader Joes but I also use the canned sour cherries from our garden or fresh berries from the market... your call.

Directions
  1. For Pastry:
  2. Sift flour sugar and salt into medium/large mixing bowl
  3. Add butter & shortening and work into mixture with your hands until it's mealy. ( I sometimes use rubber gloves because I don't always have running water nearby ).
  4. Toss with a fork and sprinkle just enough ice water into the mixture so you are able to form a ball. Briefly work into ball and ( using a plastic bag like the ones you fill with vegetables @ the market ) place dough inside bag, tie it up and place in the refrigerator for one hour.
  5. Wait about half an hour and preheat oven to 325
  6. Butter 10" tart pan or pie plate if you don't have the first
  7. Preparing Custard:
  8. Combine all filling ingredients except the for the berries in a bowl.
  9. Whisk till blended and set aside.
  10. Roll out chilled pastry to approximately to about 1/8" thick ( I also take a plastic bag and place over the dough while rolling out to manage the crumbly consistency with a little less of a hassle).
  11. Press dough onto the buttered pan, trim the top off the pastry. A little pastry over the edge is not a problem just keep it consistent at the edge
  12. Prick the pastry around bottom of pan with a fork
  13. Bake for ten (10) minutes and remove from oven
  14. Pour custard into shell and then arrange the berries as neatly or freely as you wish, it's your tarte. I recommend the berries lay out in one layer.
  15. Bake for thirty (30) minutes or until the toothpick remains clean when pricking the custard.
  16. Let cool for fifteen or twenty minutes.... mmmmmmmmm
