How to make it

  • For Pastry:
  • Sift flour sugar and salt into medium/large mixing bowl
  • Add butter & shortening and work into mixture with your hands until it's mealy. ( I sometimes use rubber gloves because I don't always have running water nearby ).
  • Toss with a fork and sprinkle just enough ice water into the mixture so you are able to form a ball. Briefly work into ball and ( using a plastic bag like the ones you fill with vegetables @ the market ) place dough inside bag, tie it up and place in the refrigerator for one hour.
  • Wait about half an hour and preheat oven to 325
  • Butter 10" tart pan or pie plate if you don't have the first
  • Preparing Custard:
  • Combine all filling ingredients except the for the berries in a bowl.
  • Whisk till blended and set aside.
  • Roll out chilled pastry to approximately to about 1/8" thick ( I also take a plastic bag and place over the dough while rolling out to manage the crumbly consistency with a little less of a hassle).
  • Press dough onto the buttered pan, trim the top off the pastry. A little pastry over the edge is not a problem just keep it consistent at the edge
  • Prick the pastry around bottom of pan with a fork
  • Bake for ten (10) minutes and remove from oven
  • Pour custard into shell and then arrange the berries as neatly or freely as you wish, it's your tarte. I recommend the berries lay out in one layer.
  • Bake for thirty (30) minutes or until the toothpick remains clean when pricking the custard.
  • Let cool for fifteen or twenty minutes.... mmmmmmmmm
