Vermicelli Pasta With Sausage And Spinach Recipe
This is a recipe I obtained from the Alexander Estate in 1991. It is trued and true and we love it. Hope you do as well.

Ingredients
  • 2 teaspoons olive oil
  • 1 pound sweet Italian sausage cut into 1/2" slices
  • 1 large white onion chopped
  • 2 large cloves garlic chopped
  • 2 cans chicken broth
  • 1/4 cup water
  • 8 ounces vermicelli pasta broken in half
  • 20 ounces fresh spinach coarsely chopped
  • 1/4 teaspoon freshly ground black pepper
  • 1/3 cup whipping cream

Directions
  1. Heat oil in large stockpot over medium high heat.
  2. Add sausage and cook 4 minutes turning as it browns.
  3. Add onions and garlic then cook 3 minutes until lightly browned.
  4. Add broth and water to pot then cover and bring to a boil.
  5. Add pasta and cook 3 minutes stirring frequently.
  6. Stir in spinach and pepper then cook 3 minutes more.
  7. Stir in cream then serve immediately.
