Crunchy-Cheesy Fish Fingers Recipe
Almost as easy and WAY better for you than the store-bought kind. And if they don't ask, you won't have to tell the kids it's good for them!

Ingredients
  • 1 1/2 lbs frozen white fish (any kind), thawed
  • 1 egg
  • 2 T light mayonaisse
  • sea salt, to taste
  • ground black pepper, to taste
  • 2 cups panko breadcrumbs
  • 1/4 cup grated parmesan cheese (low fat if you want)
  • 1/4 cup all-purpose flour
  • cooking spray

Directions
  1. Put an oven rack near the top of the oven.
  2. Put a large baking sheet inside while you preheat to 450.
  3. Beat the egg with the mayo, season with salt & pepper.
  4. Mix panko with parmesan in a shallow dish, season with salt & pepper too.
  5. Cut fish fillets into 1"x4" pieces, pat with paper towels to dry, and toss into flour .
  6. Dip fish pieces into egg mixture, then roll in breadcrumb mixture.
  7. Repeat until all the fish is breaded.
  8. Remove the hot baking sheet from the oven, spray with cooking spray.
  9. Arrange the fish in a single layer.
  10. Bake until just cooked through, flipping halfway through, about 5 minutes per side.
  11. Serve with baked potato fries.
