Crunchy-Cheesy Fish Fingers

- 1 1/2 lbs frozen white fish (any kind), thawed shopping list
- 1 egg shopping list
- 2 T light mayonaisse shopping list
- sea salt, to taste shopping list
- ground black pepper, to taste shopping list
- 2 cups panko breadcrumbs shopping list
- 1/4 cup grated parmesan cheese (low fat if you want) shopping list
- 1/4 cup all-purpose flour shopping list
- cooking spray shopping list
How to make it
- Put an oven rack near the top of the oven.
- Put a large baking sheet inside while you preheat to 450.
- Beat the egg with the mayo, season with salt & pepper.
- Mix panko with parmesan in a shallow dish, season with salt & pepper too.
- Cut fish fillets into 1"x4" pieces, pat with paper towels to dry, and toss into flour .
- Dip fish pieces into egg mixture, then roll in breadcrumb mixture.
- Repeat until all the fish is breaded.
- Remove the hot baking sheet from the oven, spray with cooking spray.
- Arrange the fish in a single layer.
- Bake until just cooked through, flipping halfway through, about 5 minutes per side.
- Serve with baked potato fries.
