How to make it

  • grease and line a spring form cake tin
  • pulse biscuits and ground ginger in food processor until finely crushed,then transfer to a bowl
  • add melted butter and mix until combined
  • spoon mixture into cake tin and press down with fingertips and a little up the sides then chill until next step is complete
  • using a food processor whiz the cheese until smooth add remaining ingredients except chocolate and ginger process until well combined
  • fold in chopped ginger and 1tsp of ginger syrup
  • spoon cheese mixture into the biscuit base and chill for 2 hours before serving garnish with shavings of chocolate
