Ingredients
  • 240g digestive biscuits
  • 1tsp ground ginger
  • 125g butter unsalted and melted
  • 500g cream cheese
  • 1/2 cup castersugar
  • 1/2 cup full cream ricotta
  • 100mls pure cream
  • 1/2cup mascarpone cheese
  • 3/4 cup finely sliced stem ginger in syrup
  • 50g dark chocolate to garnish
  • and 1tsp of stem ginger syrup reserved

Directions
  1. grease and line a spring form cake tin
  2. pulse biscuits and ground ginger in food processor until finely crushed,then transfer to a bowl
  3. add melted butter and mix until combined
  4. spoon mixture into cake tin and press down with fingertips and a little up the sides then chill until next step is complete
  5. using a food processor whiz the cheese until smooth add remaining ingredients except chocolate and ginger process until well combined
  6. fold in chopped ginger and 1tsp of ginger syrup
  7. spoon cheese mixture into the biscuit base and chill for 2 hours before serving garnish with shavings of chocolate
