stem ginger cheesecake

- 240g digestive biscuits shopping list
- 1tsp ground ginger shopping list
- 125g butter unsalted and melted shopping list
- 500g cream cheese shopping list
- 1/2 cup castersugar shopping list
- 1/2 cup full cream ricotta shopping list
- 100mls pure cream shopping list
- 1/2cup mascarpone cheese shopping list
- 3/4 cup finely sliced stem ginger in syrup shopping list
- 50g dark chocolate to garnish shopping list
- and 1tsp of stem ginger syrup reserved shopping list
How to make it
- grease and line a spring form cake tin
- pulse biscuits and ground ginger in food processor until finely crushed,then transfer to a bowl
- add melted butter and mix until combined
- spoon mixture into cake tin and press down with fingertips and a little up the sides then chill until next step is complete
- using a food processor whiz the cheese until smooth add remaining ingredients except chocolate and ginger process until well combined
- fold in chopped ginger and 1tsp of ginger syrup
- spoon cheese mixture into the biscuit base and chill for 2 hours before serving garnish with shavings of chocolate
