saffronamp mandarin cake

- 3 mandarins un peeled shopping list
- 1large pinch of saffron threads shopping list
- 3 eggs shopping list
- 250g of caster sugar shopping list
- 75g plain flour sifted shopping list
- 12/3 cups of almond meal shopping list
- 2tsp of baking powder shopping list
- thick cream to serve shopping list
How to make it
- heat oven to 170 and line a 20cm cake tin with baking paper
- halve place mandarins in a pan and cover with water bring to a boil then reduce to a medium heat and simmer for 40 minutes until soft
- halve, remove seeds,then blend to a puree with the saffron in a food processor
- using an electric beaters whisk eggs and sugar until pale
- fold in flour almond meal,baking powder and puree.
- pour into prepared tin and bake for 45-50 minutes until golden
