Saffronamp Mandarin Cake Recipe
this is cake for a special occasion but it is very delightful

Ingredients
  • 3 mandarins un peeled
  • 1large pinch of saffron threads
  • 3 eggs
  • 250g of caster sugar
  • 75g plain flour sifted
  • 12/3 cups of almond meal
  • 2tsp of baking powder
  • thick cream to serve

Directions
  1. heat oven to 170 and line a 20cm cake tin with baking paper
  2. halve place mandarins in a pan and cover with water bring to a boil then reduce to a medium heat and simmer for 40 minutes until soft
  3. halve, remove seeds,then blend to a puree with the saffron in a food processor
  4. using an electric beaters whisk eggs and sugar until pale
  5. fold in flour almond meal,baking powder and puree.
  6. pour into prepared tin and bake for 45-50 minutes until golden
