How to make it

  • heat oven to 170 and line a 20cm cake tin with baking paper
  • halve place mandarins in a pan and cover with water bring to a boil then reduce to a medium heat and simmer for 40 minutes until soft
  • halve, remove seeds,then blend to a puree with the saffron in a food processor
  • using an electric beaters whisk eggs and sugar until pale
  • fold in flour almond meal,baking powder and puree.
  • pour into prepared tin and bake for 45-50 minutes until golden
