Chicken Noodle Parmesan Recipe
Quick and easy , make all in one pan. My family loves it. Serve with salad and garlic bread

Ingredients
  • 1 egg, beaten
  • 1/2 cup Italian-flavoured bread crumbs
  • 1/4 cup Parmesan cheese
  • 4 boneless skinless chicken breast halves
  • (1-1/2 lb total)
  • 1/4 cup vegetable oil
  • 1 jar (26 oz) spaghetti sauce
  • 1 1/2 cups water
  • 1/2 lb fresh sliced mushrooms
  • 2 packages (3 oz each) ramen noodles, broken but not crushed (seasoning pack removed for another use)
  • 1/2 cup (2 oz) shredded mozzarella cheese

Directions
  1. Place egg in a shallow dish.
  2. Mix bread crumbs and Parmesan cheese in another shallow dish.
  3. Dip chicken in the egg then in the bread crumbs mixture, coating completely.
  4. In a large skillet, heat oil over medium heat. Cook chicken for 4-5 minutes per side, or until juices run clear.
  5. Remove chicken and cover to keep warm.
  6. Add the spaghetti sauce, water, mushrooms and noodle to the skillet.
  7. Cook 4-5 minutes, or until the noodles are tender, stirring occasionally.
  8. Reduce heat to medium-low and return the chicken to the skillet over the noodles.
  9. Sprinkle chicken with the mozzarella cheese.
  10. Cover and cook for an addition 4-5 minutes, or until the chicken is heated through and the cheese is melted.
