Sweet and Hot Chicken Kabobs

- 3 tablspoons vegetable oil shopping list
- 1 cup sweet onion, chopped shopping list
- 4 cloves garlic, minced shopping list
- 1 1/3 cups honey shopping list
- 3/4 cup ketchup shopping list
- 1/3 cup lemon juice shopping list
- 1/4 cup soy sauce shopping list
- 2 tablespoons oyster sauce shopping list
- 2 teaspoons hot Asian chli paste shopping list
- 6 large boneless skinless chicken thighs shopping list
- 2 large red bell peppers, cut into 1 inch cubes shopping list
- 2 green bell peppers, cut into 1 inch cubes shopping list
- 1 sweet onion, cut into 1/2 inch thick wedges shopping list
How to make it
- In saucepan, saute onion in oil over medium heat for 5 to 6 minutes.
- Add garlic and saute 1 minute.
- In bowl, whisk together honey, ketchup, lemon juice, soy sauce, oyster sauce and chili paste. Add to skillet.
- Simmer uncovered 15 minutes.
- Cover and chill until ready to use.
- Arrange chicken in glass pie plate. Cover with plastic wrap, venting to release steam. Microwave on high setting 5 minutes.
- Turn chicken. Recover and microwave 5 additional minutes. Remove and let cool slightly. Cut into 1 inch cubes.
- Arrange peppers and onion wedges in pie plate. Cover, venting, and microwave 3 minutes.
- Divide chicken and vegetables between 6 wooden or metal skewers.
- Brush liberally with sauce.
- Grill (or broil) 4 minutes per side, brushing with additonal sauce.
