Sweet And Hot Chicken Kabobs Recipe
Perfect for the hot days of summer. I usually double the recipe for 6 people.

Ingredients
  • 3 tablspoons vegetable oil
  • 1 cup sweet onion, chopped
  • 4 cloves garlic, minced
  • 1 1/3 cups honey
  • 3/4 cup ketchup
  • 1/3 cup lemon juice
  • 1/4 cup soy sauce
  • 2 tablespoons oyster sauce
  • 2 teaspoons hot Asian chli paste
  • 6 large boneless skinless chicken thighs
  • 2 large red bell peppers, cut into 1 inch cubes
  • 2 green bell peppers, cut into 1 inch cubes
  • 1 sweet onion, cut into 1/2 inch thick wedges

Directions
  1. In saucepan, saute onion in oil over medium heat for 5 to 6 minutes.
  2. Add garlic and saute 1 minute.
  3. In bowl, whisk together honey, ketchup, lemon juice, soy sauce, oyster sauce and chili paste. Add to skillet.
  4. Simmer uncovered 15 minutes.
  5. Cover and chill until ready to use.
  6. Arrange chicken in glass pie plate. Cover with plastic wrap, venting to release steam. Microwave on high setting 5 minutes.
  7. Turn chicken. Recover and microwave 5 additional minutes. Remove and let cool slightly. Cut into 1 inch cubes.
  8. Arrange peppers and onion wedges in pie plate. Cover, venting, and microwave 3 minutes.
  9. Divide chicken and vegetables between 6 wooden or metal skewers.
  10. Brush liberally with sauce.
  11. Grill (or broil) 4 minutes per side, brushing with additonal sauce.
