Gluten Free Southern Corn Bread Recipe
This is a sweet, southern style corn bread. Wonderful served warm with butter.

Ingredients
  • Dry Ingredients:
  • 1 cup + 2 tblsp corn meal
  • ¼ cup rice flour
  • ¼ cup potato starch
  • ¼ cup corn starch
  • 2 tblsp tapioca flour
  • 1tsp xanthan gum
  • 1 cup sugar
  • 1 tblsp gluten-free baking powder
  • 1 tsp salt
  • Wet Ingredients:
  • 1 egg
  • 1 cup milk
  • 1/3 cup butter, melted
  • ¼ tsp apple cider vinegar

Directions
  1. Preheat oven to 375 degrees.
  2. Heavily butter an 8” square glass dish.
  3. Combine dry ingredients in a large bowl.
  4. Combine wet ingredients in a medium bowl.
  5. Add wet ingredients to dry ingredients and stir just until lumps are removed.
  6. Pour into buttered dish.
  7. Bake for 25-30 minutes, until a toothpick inserted in the center comes out clean.
  8. Serve warm.
