Ice Cream Cone Cupcakes Recipe
I found this recipe in the diabetes and you mag. I bought all the ingredients to do this project with my kids this weekend. So hopefully I will have pics by monday.

Ingredients
  • 8 plain flat- bottom ice cream cones
  • 1/2 of am 18.25oz package yellow, or lemon, cake mix
  • 3 Tbsp reduced - fat cottage cheese
  • 2 Tbsp canola oil
  • 3/4 c egg substitute
  • 2 tsp colored sprinkles

Directions
  1. Preheat oven to 350 degrees F.
  2. Place cones in cups of muffin pan
  3. using an electric mixer, beat cake mix with cottage cheese, oil and egg substitute, beating according to package instructions
  4. pour enough batter in each cone to fill it 1/2 full
  5. Bake in center of oven for about 10 to 15 minutes or until toothpick inserted in center comes out clean.
  6. remove from oven and sprinkle wach cone cupcake with sprinkles.
  7. Let Cool
  8. Great for letting kids help out
  9. Personal Note: I plan to exchange the cottage cheese for silken tofu.
