Almond Rice Recipe
This is a family favorite and easy to make. I make this when plain rice is just too "plain", but I don't feel like making mashed potatoes.

Ingredients
  • 1 3/4 cups long-grain white rice, uncooked
  • 3 cups broth (vegetable or chicken, your preference)
  • 1/2 cup slivered almonds, toasted
  • 2 tablespoon unsalted butter
  • 1 tablespoon dried onion flakes
  • 1 teaspoon salt

Directions
  1. Melt the butter in the pan you plan to cook the rice in.
  2. Turn up the heat and add the rice. Stir the rice to coat it with the butter.
  3. Now this step might sound strange, but fry the rice until it starts to turn brown, stirring frequently. This gives the rice a nutty flavor that goes well with the almonds.
  4. Turn down the heat to low, add the onion flakes, salt and broth.
  5. Cover the pan and let the rice cook until it is tender, about 20 minutes.
  6. Remove the pan from the heat and fluff the rice with a fork.
  7. Stir in the toasted almonds and serve.

This sounds delightful! I have a recipe from a friend in the 1970s with 2 or 3 times more butter, and I don't make it very often.

Love rice and almonds! Browning the rice makes it very flavorful!


This looks great! I always saute the rice in butter or oil when I make pilafs.
