How to make it

  • Put flours in a bowl.
  • Slowly add water, stirring to avoid lumps. Stirring lots is OK.
  • Stir in salt.
  • Let the dough ferment for about a day, and no more than four.
  • Heat an electric fry pan until water drops dance on the surface.
  • Coat the pan with a thin layer of batter. The batter should be thicker than a crepe, but thinner than a traditonal pancake.
  • Cook until the pancake is filled with bubbles and the surface is dry.

    Teff flour is made from the Teff grain, which is grown in the East African highlands. The Teff grain has very little gluten and is high in iron and calcium. If you don't have an African specialty store near you, you will likely have to experiment with other flours. Other flours would likely work just as well.
