This flatbread is used as both the plate and the utensil in an East African meal. A thickened goat or beef stew with tomatoes is poured over an Injera, and extra flatbread is supplied to scoop and soak up the stew. http://www.exploratorium.edu/cookin... More

Ingredients
  • 1/4 cup teff flour
  • 3/4 cup all-purpose flour
  • 1 cup water
  • pinch salt
  • peanut oil

Directions
  1. Put flours in a bowl.
  2. Slowly add water, stirring to avoid lumps. Stirring lots is OK.
  3. Stir in salt.
  4. Let the dough ferment for about a day, and no more than four.
  5. Heat an electric fry pan until water drops dance on the surface.
  6. Coat the pan with a thin layer of batter. The batter should be thicker than a crepe, but thinner than a traditonal pancake.
  7. Cook until the pancake is filled with bubbles and the surface is dry.

Jgnat what is Teff flour and is their any substitutes? love the recipe thanks


Teff flour is made from the Teff grain, which is grown in the East African highlands. The Teff grain has very little gluten and is high in iron and calcium. If you don't have an African specialty store near you, you will likely have to experiment with other flours. Other flours would likely work just as well.
