Fresh Peach Pie Recipe
this pie is my all time favorite recipe. I have been known to make it and eat it all by myself!!

Ingredients
  • Pastry for 9 inch 2 crust pie
  • 6 c. sliced fresh peaches (about 11 medium)
  • 1 tsp. lemon juice
  • 1 1/4c. sugar
  • 1/3 c. flour
  • 1/4 tsp. cinnamon
  • 2 tbsp. butter
  • 1 egg to brush on pastry shell (optional)

Directions
  1. heat oven to 425 degrees. Prepare pastry.
  2. Mix peaches and lemon juice.
  3. Stir together sugar, flour, and cinnamon; mix with peaches. Turn into pastry lined pie pan; dot with butter.
  4. Cover with top crust which has slits in it; seal and flute.
  5. Brush pastry lightly with egg yolk for golden brown crust.
  6. Cover pie with foil and bake for 25 minutes. Then remove foil and cook for another 10 minutes to crispen top pastry layer.
