Fresh Peach Pie

- Pastry for 9 inch 2 crust pie shopping list
- 6 c. sliced fresh peaches (about 11 medium) shopping list
- 1 tsp. lemon juice shopping list
- 1 1/4c. sugar shopping list
- 1/3 c. flour shopping list
- 1/4 tsp. cinnamon shopping list
- 2 tbsp. butter shopping list
- 1 egg to brush on pastry shell (optional) shopping list
How to make it
- heat oven to 425 degrees. Prepare pastry.
- Mix peaches and lemon juice.
- Stir together sugar, flour, and cinnamon; mix with peaches. Turn into pastry lined pie pan; dot with butter.
- Cover with top crust which has slits in it; seal and flute.
- Brush pastry lightly with egg yolk for golden brown crust.
- Cover pie with foil and bake for 25 minutes. Then remove foil and cook for another 10 minutes to crispen top pastry layer.

My dad was the chief baker on his US Navy ship during WWII. This is his recipe! LOVE IT! PERFECT! I baked one last night, and it brought back such sweet memories! It's also an excellent recipe for beginning bakers b/c it's so easy. AWESOME job!
